FSIS Extends E. coli Testing to Additional Animal Species
The Food Safety and Inspection Service (FSIS) is requiring slaughter establishments to test carcasses of sheep, goats, horses, ducks, geese, and guineas for generic E. coli, following the extension of existing testing requirements to these animals. This rule aims to ensure the adequacy of process controls for preventing fecal contamination and associated bacteria.
