FSIS Releases Revised Guideline for Calculating Retained Water in Raw Meat and Poultry

The US Department of Agriculture's Food Safety and Inspection Service (FSIS) has published a revised guideline to help meat and poultry establishments accurately calculate retained water in raw products and properly label them, with enforcement to begin soon.
