USDA Proposes Changes to Carcass Beef Standards

The U.S. Department of Agriculture's Agricultural Marketing Service is proposing amendments to the United States Standards for Grades of Carcass Beef, allowing for the use of dentition and age documentation to classify the maturity of carcasses, in addition to skeletal and muscular evidence.
