USDA Announces Changes to Salmonella and Campylobacter Testing Program for Raw Chicken and Pork Products
The Food Safety and Inspection Service (FSIS) is proposing new performance standards for reducing Salmonella and Campylobacter in raw chicken parts and not-ready-to-eat chicken and turkey products, and plans to begin sampling these products to better understand the prevalence of these pathogens. The agency also intends to start an exploratory sampling of raw pork products and implement routine sampling of raw chicken parts to assess the effectiveness of establishments' processes in addressing Salmonella and Campylobacter on poultry carcasses.
